when I think of spring I think of bright herbaceous flavors. of course with a hint of citrus. my favorite way to prepare chicken is with a lemon, garlic & parsley marinade. and I will give credit where credit is due, but this is the way my mom made chicken for us as kids - and I know it’s not reinventing the wheel, but it is so good and fresh. forever will be one of my favorite ways to have chicken.

this week I decided to throw some chicken thighs in the marinade and bake them on top of some potatoes to get all the chicken juices doings their thanggg. and their thang they did.

what you’ll need:

1.5 lb boneless skinless chicken thighs

2 lemons, juiced
