between the weather and being a woman during certain parts of the month…this girl has been lazy and craving cozy food. and I am typically not a lazy person but I mean like I have been skipping workouts, watching way too much TV, and relaxing a little bit too much. but, I always remind myself that these are signs from our bodies to slow down and take a minute to reset, so I will do just that.
anyways, the reason I am oversharing just a bit is because I came up with a new and easier way to make one of my favorite types of pasta. I typically like to sauté everything on the stove and crush all the tomatoes by hand, and no this is not hard at all…but I did not want the mess on the stove from the tomatoes and oil splattering everywhere so I thought, lets bake it!
first mistake I made, don’t preheat your oven to 400°F like me…the fire alarm went off lol. just a simple 350°F will do. add all the ingredients to a sheet pan with whole smashed garlic cloves, not sliced or minced because they will burn. bake then blend and mix with pasta. I just posted a video here if you are a visual learner like me, but allow me to write out this recipe for you because it was so so so yummy and yielded maximum 4 dishes to clean and half of them when in the dish washer so it doesn’t even count!
cherry tomato pasta
yields 2 plates, double, triple, quadruple as needed
what you need
12 oz sugar bomb tomatoes (or just cherry tomatoes)
